Tip of the week

Flame Color Can Signal Time for Range Maintenance
Foodservice equipment operators can tell when it’s time to tune-up their ranges by looking at the flames. A wavy, uneven or yellow flame indicates a need to clean up the burners and adjust the air flow. To do so, loosen the adjustment screw and move the shutter to get a nice blue, bullet-shaped flame. Avoid drilling out the burners or the gas orifice to get a bigger flame — that will reduce burner efficiency.
